Just cakes!

No cookies this year for raya, though my mother-in-law gave me a jar each of jam tarts and peanut butter cookies. It’s just Carrot Walnut cake this year, which my hubby, son, nephews and nieces enjoy eating so much, and which my hubby’s aunts appreciates and look forward to come each raya.

Even my niece, Sarah, who is now in the States, would prefer my Carrot Walnut Cake to Secret Recipe’s Carrot Cake. Now that is what I call a real appreciation! Thanks, Sarah!

I guess you will just have to wait some time yet before you can taste my Carrot Cake again, huh, Sarah? Don’t worry, I will definitely make one for you if you are back here in Malaysia, God willing.

I baked 4 pans on Tuesday, one each for my mum and mother-in-law, ½ each (of a 9” x 9” cake) for Mak Zai and Mak Jah (my hubby’s aunts), and my two sisters, Lin and Chik.


The ‘decoration’ is simple with just the Cream Cheese frosting, as I don’t want to spoil the lovely taste of the cake itself. It was my son’s idea to add on the sugar decoration. He loves the play of colours of the sugar beads.

Now, it’s time to dive in for a bite! Yum!

I don't fancy cakes.. (well.. Secret Recipe blueberry cheesecake is kinda nice).. but I sure love Kaknun's carrot cakes. Is it the cream cheese? I guess it's the crunchiness in the cake itself.

Your carrot cake sounds a lot like ours except we call them carat cake. it also has cream cheese icing. we got the recipe when we were staying in the States in the early 80s.
